GREEN BEAN CHICKEN

Green Bean Chicken is a simple yet flavorful stir-fry dish that brings together tender pieces of chicken and crisp green beans in a savory, umami-rich sauce. This dish is loved for its balanced combination of protein and vegetables, making it both satisfying and relatively healthy. It’s one of those meals that comes together quickly, which makes it perfect for busy weeknights when you want something fresh and homemade without spending hours in the kitchen.
The star of the show, green beans, are typically stir-fried until they develop a slight char — giving them a smoky depth and crunchy bite that pairs perfectly with juicy, marinated chicken. The sauce, usually made from a mix of soy sauce, oyster sauce, garlic, and a touch of sesame oil, coats every bite in a glossy, savory glaze that makes it hard to stop eating. It’s typically served with steamed rice or noodles, making it a complete, comforting meal in a bowl. Green Bean Chicken is one of those dishes that’s easy to master — and easy to love.


Chicken
1 lb chicken breast, sliced into 1/4" pieces
1 tbsp soy sauce
1/4 tsp white pepper
1/2 tsp salt
1 tbsp shaoxing wine
1/2 tbsp neutral oil, I used avocado oil
1/2 tbsp cornstarch
Sauce
1/2 cup chicken stock
2 tbsp light soy sauce
1 tbsp oyster sauce
1/2 tbsp dark soy sauce
1 tbsp sugar
1 tsp sesame oil
1/2 tbsp cornstarch
Aromatics & Oils
1 tbsp ginger, chopped
6 cloves garlic, chopped
1 medium onion, cut into thin slices, petals separated
1 lb string beans, cut into 2" strips
1 cup neutral oil, I used avocado oil


Slice breast into ¼" pieces; marinate 15 min with salt, white pepper, soy sauce, Shaoxing wine, and cornstarch.
Cut green beans into 2" pieces, slice onion and separate layers.
Chop garlic and ginger, keep separate.
Combine chicken stock, soy sauce, oyster sauce, dark soy sauce, sugar, sesame oil, and a pinch of MSG.
Heat 1 cup avocado oil on high. Fry marinated chicken for 2 minutes until just cooked. Remove chicken and reserve ~2 tbsp oil in pan.
On medium-high, stir-fry green beans for 1–2 minutes until blistered. Add onions, stir 30 seconds. Add garlic and ginger, stir until fragrant (~30 sec).
Turn heat to high. Return chicken to the pan, pour in sauce, and stir well. Cook for 1–2 minutes until sauce thickens and coats everything.
Serve with freshly steamed rice and top with sesame seeds and chili oil.
