Chicken

  • 1 lb chicken breast, sliced into 1/4" pieces

  • 1 tbsp dark soy sauce

  • 1/4 tsp white pepper

  • 1 tbsp Shaoxing wine

  • 1/2 tbsp sesame oil

  • 1/2 tbsp cornstarch


Sauce

  • 1/2 cup chicken stock

  • 1 tbsp light soy sauce

  • 1 tbsp oyster sauce

  • 1 1/2 tbsp dark soy sauce

  • 1 tbsp sugar

  • 1 tsp sesame oil

  • 1/2 tbsp cornstarch


Aromatics & Oils

  • 1 tbsp ginger, chopped

  • 6 cloves garlic, chopped

  • 1 medium onion, diced

  • 1 lb string beans, cut into 2" strips

  • 4 tbsp neutral oil (I used avocado oil)

  • 4 tbsp sesame oil

  1. Slice the chicken breast into ¼" pieces. Marinate for 15 minutes with white pepper, soy sauces, Shaoxing wine, sesame oil, and cornstarch.

  2. Cut the green beans into 2" pieces. Slice the onion and separate the layers.

  3. Chop the garlic and ginger, keeping them separate.

  4. Combine chicken stock, soy sauce, oyster sauce, dark soy sauce, sugar, and sesame oil in a bowl.

  5. Heat sesame and avocado oil on high. Fry the marinated chicken for 2 minutes until just cooked. Remove the chicken and reserve about 2 tablespoons of oil in the pan.

  6. On medium-high heat, stir-fry the green beans for 1–2 minutes until blistered. Add the onions and stir for 30 seconds. Then, add the garlic and ginger, stirring until fragrant (about 30 seconds).

  7. Turn the heat to high. Return the chicken to the pan, pour in the sauce, and stir well. Cook for 1–2 minutes until the sauce thickens and coats everything.

  8. Serve with freshly steamed rice. Top with sesame seeds and chili oil for added flavor.
