CHICKEN FAJITAS

Happy Cinco de Mayo! Let the fiesta begin...


Chicken fajitas are an easy and flavorful anytime meal. It's specially good when you don't have that much time. People think that fajitas are a classic Mexican dish but it is not. It's a TexMex dish. It's made up of juicy chicken is seasoned, seared and cooked to perfection, then tossed with sauteed bell peppers and onions. A squeeze of fresh lime adds a punch of flavor and the chicken fajitas are served with warm tortillas and toppings. You can’t beat this healthy family favorite recipe.

Ingredients:

  • 2 pounds thinly sliced chicken breast or tenderloins

  • 2 tablespoons fajita seasoning

  • 2 tablespoons vegetable oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 red onion, sliced

Directions:

  1. Place chicken into a bowl, add fajita seasoning and oil, mix well to make sure all chicken pieces are coated. Let marinade for a minimum of 30 minutes.

  2. Cut the peppers and onions into thin strips. Add 2 tablespoons of vegetable oil in a cast iron skillet (or any frying pan works). Once oil is hot, add peppers and onions and saute for 3 - 4 minutes, stirring occasionally. Then, remove vegetables from pan and set aside.

  3. Place the chicken in the cast iron in a single layer over medium heat and cook for 4 - 5 minutes on each side or until cooked.

  4. Remove the chicken from pan and slice.

  5. Return chicken, peppers, and onions to the cast iron. Mix well!

  6. Serve with tortillas, guacamole, beans, corn, Mexican rice, salsas, cilantro, and lime.
