A traditional Turkish and Armenian side dish is Bulgur Pilaf. There are many ways to cook it. It's basically like a Middle Eastern risotto. I've posted a recipe for a basic version of Bulgur Pilaf before. Well, I decided to play around with some ingredients and came up with my own version of a red Bulgur Pilaf. It's so flavorful and everyone will love it. They sure do at my house!
2 Cups bulgur #4
1/2 green bell pepper
6 tomatoes puréed
2 tblspns tomato paste
4 Cups spiced chicken broth*
In a food processor, process onion, bell pepper, & jalapeño till very fine.
In a pot, add olive oil and add pepper/onion mix. Mix well for 2 minutes.
Add in the tomatoes and tomato paste. Mix well for 4 minutes.
Add in bulgur & mix well for 2 minutes.
Add in salt, cinnamon, and red pepper.
Add in spiced chicken broth. Bring to boil, then lower heat and simmer till bulgur is cooked well, stirring occasionally.
***Spiced Chicken Broth***
Sear chicken breasts or thighs (for more flavor) in ghee. Add baharat, salt, black pepper, cinnamon powder, cardamom powder, turmeric powder, red pepper, freshly grated nutmeg, bay leaves, an onion and water and boil for 45 minutes in pressure cooker or until chicken is fully cooked in a regular pot.
