Fattoush is a Middle Eastern salad with toasted or fried bread on top, like croutons. The mix of the freshness with a little bit of crunch makes this dish amazing. What makes this salad so unique is the use of sumac. In the Mediterranean region today, sumac is used as a tabletop condiment or added during cooking to lend a pleasant, fruity sourness and soft cherry color to sauces, poultry, fish, rice, and salads. The flavor is kind of like lemon juice or vinegar but milder and less acidic.


  • 2 bunches purslane

  • 6 romaine lettuce leaves, shredded

  • 1 green bell pepper, diced

  • 2 small tomatoes, diced

  • 2 cucumbers, diced

  • 1/4 onion, thin moon shapes

  • 2 tablespoons pomegranate molasses

  • 2 tablespoons sumac

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon red pepper


  1. Add first 6 ingredients in a bowl.

  2. Place next 5 ingredients in a blender or food processor and run till mixed well.

  3. Pour dressing on salad and mix well and enjoy topped with crispy pita chips.

*NOTE: Purslane is seasonal and you will not be able to find it all the time. When you cannot find it, you can replace it with Romaine Lettuce, finely shredded.
