PASTA WITH SPINACH AND CREAMY TOMATO SAUCE

Vacationing never gets old! My trip to Jordan was amazing yet again. Counting the days to go back again. Then, I came home and was a tourist in my town with my cousin. I hadn't been to some parts of Los Angeles in a while. That's what happens when you have guests from overseas. It's been a crazy month and so much has happened. I hadn't cooked in a while and it felt so good to come back and do it again! I was home last night with nothing to eat in the house, so I decided to throw together this quick and easy pasta recipe. Pasta is always a good idea! I gathered what I had in the fridge and pantry to work with and put this together! There's nothing better than a comforting bowl of pasta on a cold night, a glass of wine, Netflix, and chilling!

Ingredients:

  • 1 pound angel hair pasta or pasta of your choice

  • 4 tablespoons extra virgin olive oil

  • 3 cloves garlic, crushed, minced, or squeezed

  • 1 cup fresh spinach

  • 1 tablespoon salt

  • 1 tablespoon red pepper

  • 1 tablespoon black pepper

  • 1 (8 oz) can tomato sauce

  • 1 tablespoon dried basil

  • 1/2 cup heavy whipping cream

  • Extra Virgin Oilve Oil

  • Parmesan

  • Freshly ground black pepper

Directions:

  1. Place olive oil in a saucepan and squeeze in garlic. Toss so it doesn't burn.

  2. Add in spinach immediately and toss continuously till wilted.

  3. Add salt, dried basil, red pepper, and black pepper and continue mixing.

  4. Once spinach is wilted, add in can of tomato sauce. Put on medium heat and allow to cook together for 5 minutes until thickened a little.

  5. Then, add in heavy whipping cream and stir till fully incorporated.

  6. In the meantime, boil pasta according to package. Drain and place directly into sauce. Toss well!

  7. Place in serving bowl, drizzle with good quality extra virgin olive oil, grate parmesan cheese on top, and add a sprinkle of freshly ground black pepper. Enjoy!
