Happy November everyone! Let's get ready to get the celebrations going this month and my favorite, next month! Fall is full of such warm, earthy flavors. Let’s talk about these garlic and herb-roasted carrots. These carrots are a great side that needs little prep and adds a punch of color and flavor to your plate! The carrots come out sweet, tender, and really delicious. It is a perfect side dish that goes great with holiday meats, like Pot Roast, Short Ribs, Roasted Chicken, and even that good old Thanksgiving Turkey. With the holidays fast approaching, these Oven Roasted Carrots are a must on anyone's menu because they are easy, fast, and absolutely delicious!
1 pound fresh carrots, washed and cut in half lengthwise
2 tablespoons Pasolivo Garlic Olive Oil
1 tablespoon Pasolivo Spicy Italian Blend
1/4 teaspoon salt
Preheat oven to 375 degrees F.
In a small bowl, toss together the carrots, the olive oil, Pasolivo Spicy Italian Blend, and salt, making sure each carrot is seasoned with the Italian blend.
Arrange the carrots in a single layer on a baking tray and bake for 35 minutes or until fork-tender.
Place carrots in the serving dish and drizzle over any oil in the baking tray!
