Ground Beef and Potato Taco Bowl

Yesterday was Cinco de Mayo and I wanted to celebrate by trying out a new recipe. After some brainstorming, I decided to create a ground beef and potato taco bowl. Ground beef and potato taco bowl is a delicious and satisfying meal that combines the flavors of seasoned ground beef, crispy potatoes, and all your favorite taco toppings. The dish typically starts with browning ground beef in a skillet with onions and a blend of Mexican spices like cumin, chili powder, and paprika. The meat is cooked through and flavorful and the diced potatoes are baked in the oven to crisp up and soak up all the tasty seasonings.


Once the beef and potatoes are cooked to perfection, they are served in a bowl alongside toppings like beans, pico de gallo, guacamole, shredded cheese, sour cream, chipotle aioli, and/or salsa. This customizable meal allows you to mix and match your favorite ingredients to create a taco bowl that suits your tastes perfectly. Whether enjoyed for lunch or dinner, ground beef and potato taco bowl is sure to become a family favorite for its hearty flavors and easy preparation. Yes, I did mention it would be simple. Although there are many pieces, you should be able to finish it all in under an hour. The end result was absolutely delicious and definitely a recipe I'll be making again!

Ingredients:

Ground Beef Taco

  • 1 onion, finely diced

  • 2 lbs. ground beef

  • 1 1/2 packs of spicy taco seasoning

  • 1/2 cup Pace Chunky Salsa

  • 6 tablespoons lemon juice


Crispy Baked Potatoes

  • 8 potatoes, diced

  • 1/2 pack of spicy taco seasoning

  • Olive oil


Black Beans

  • 2 (15oz.) cans black beans

  • 1 tablespoon onion powder

  • 1 tablespoon garlic powder

  • 1/2 tablespoon cumin

  • 1/2 tablespoon Aleppo pepper

  • 1/2 teaspoon salt


Chipotle Aioli

  • 1 Egg yolk

  • 1/2 tablespoon Lemon juice

  • 2 cloves Garlic

  • 1/4 teaspoon sugar

  • 1/2 teaspoon salt

  • 2 tablespoons Chipotle in adobo

  • 1/2 Cup Vegetable oil


Guacamole

  • 2 avocados, mashed

  • 1/2 tomato, finely diced

  • 1/2 shallot, finely diced

  • 1/2 jalapeno, finely diced

  • 6 tablespoons lemon juice

  • 1 pack of guacamole seasoning


Pico de Gallo

  • 2 tomatoes, finely diced

  • 1 shallot, finely diced

  • 1 jalapeno, diced

  • 1 lime, juiced

  • 1 teaspoon salt

  • 1 cup chopped cilantro

Directions:

Ground Beef Taco

  1. In a pan, add a little olive oil and meat. Cook till browned & cooked through, about 15 - 20 minutes.

  2. Add taco seasoning and the salsa. Mix well so that all the meat is evenly covered.

  3. Add the lemon juice and mix it in. Simmer for 3 to 5 minutes making a thick sauce.


Crispy Baked Potatoes

  1. Preheat oven to 425 degrees F.

  2. In a baking tray, mix together diced potatoes, taco seasoning, and a good drizzle of olive oil. Toss well and bake for 30 minutes or until golden brown and crispy.


Black Beans

  1. Place all the ingredients into a pot, mix well, and cook on a low simmer for 15 minutes.


Chipotle Aioli

  1. Place the yolk, lemon juice, garlic, sugar, salt, and chipotle in a food processor and pulse to combine.

  2. Turn the processor on and slowly pour in the oil. Process until aioli forms, about a minute. Turn the processor off, scrape the sides, and process again until combined.

  3. Serve immediately or store in an air-tight container in the refrigerator until ready to use. Makes approximately 1/2 cup.


Guacamole

  1. Add all ingredients into a bowl and mix well to combine.


Pico de Gallo

  1. Cut all the tomatoes, onions, and jalapenos into very fine dice.

  2. Combine in a bowl with the lime juice, cilantro, and 1 tsp of the salt.

  3. Mix and taste. If desired add in additional salt. Allow flavors to mingle before serving, for at least an hour.
