AVOCADO TOAST WITH STRAWBERRIES AND POMEGRANATES

Avocado toast is a big trend right now, well it has been for a while now, and there's definitely a reason for that. I feel like if you go to any upscale coffee shop or breakfast/bunch place, there will be some version of an avocado toast on the menu. But not everyone knows about the magic of avocado toast, and not everyone knows the most delicious way to DO avocado toast.


Avocado toast has become one of my new favorite breakfast dishes. It’s healthy, simple, and delicious. And best of all, it’s super easy to make and ready in under 5 minutes. The possibilities are endless to how you can make avocado toast. But this avocado toast might be the perfect breakfast: savory, sweet, tart, flavorful and most importantly colorful and inviting. The appearance of the dish should draw attention to the taste. And then you smell it. Then you’ll go crazy to taste it! The taste will stay in your mouth.

Ingredients:

  • 6 slices sourdough bread. toasted

  • 3 avocados, mashed

  • 2 tablespoons lemon juice

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 8 strawberries, sliced

  • 6 tablespoons pomegranate arils

  • 18 basil leaves, julienned

  • pumpkin seeds

  • sesame seeds

  • balsamic glaze

Directions:

  1. Place avocado in a bowl. Thoroughly mash. Add lemon juice and salt and pepper. Mix to combine.

  2. Spread mashed avocado on toast.

  3. Top with strawberries, pomegranate arils, basil, pumpkin seeds, and sesame seeds.

  4. Drizzle with balsamic glaze. Enjoy!

Note: In addition to being rich in antioxidants, strawberries and pomegranate add a refreshing burst of natural sweetness and minimal added sugar.
