I learned a new word recently.... commensality. It's a noun that means 'the practice of eating together.' And just in time, because pizza is one of those foods that are perfect for commensality. Pizza is made pretty often at my house. You can get away with putting practically anything on top of a pizza so you can please anyone with a good pizza: the vegetarian, the carnivore, the ones with simple appetites, and those with sophisticated palates. This vegetarian truffle and potato pizza is super easy to make, it sounds a little fancy, and it tastes amazing! It's perfect for those who love gourmet food. I had never tried to make a pizza bianca, or white pizza. However, I decided to experiment with this pizza. I was craving something with truffles, my favorite ingredient! I decided, instead of the typical pizza sauce, to use truffle butter as the base of this pizza. Well, it was a success! If you love truffles, this pizza is for you!
1/2 package Pizza Dough (I get mine from Trader Joe's.)
3 tablespoons Truffle Butter
1 cup shredded Mozzarella
2 potatoes, sliced thinly
6 sprigs of Chives, minced
Slice potatoes, place them in a pot with enough water to cover them, cover and bring to a boil. Parboil the potatoes for 5 minutes. Drain and set potatoes aside.
In the meantime, cut the dough in half a roll it out. (If you like a thicker crust, use the whole package. I like mine super thin, therefore I use half the package.)
Preheat the oven to 475 degrees F.
Once you roll out the dough, place it on a pizza pan and put it in the oven for 5 minutes or until it begins to crust up.
Pull out your half baked pizza dough and spread the truffle butter onto it.
Top with mozzarella cheese.
Top with potato slices.
Sprinkle with a pinch of salt.
Place back in the oven for another 10-15 minutes.
Remove from oven, sprinkle with fresh chopped chives, and enjoy!
