TURMERIC ROASTED CAUILFLOWER WITH CHIPOTLE AIOLI

One of my favorite vegetables is cauliflower. Cauliflower is a great vegetable to have as a side dish, specially if you are on a diet. It doesn't have all those carbs and it’s also full of vitamin C. It makes a perfect low carb appetizer or side dish for you and your friends and family to enjoy. Cauliflower is a very versatile vegetable. You can add any spices to it and it will work perfectly. One way to cook cauliflower is to roast them. When you roast the cauliflower, you need to spread the florets out into a single layer on the tray or they will probably become soggy. Once the cauliflower is roasted and has browned a little, the smell and flavor will be amazing.

As for this aioli, it is quick and easy to make and bursting with flavor. It's a perfect blend of spicy and creamy and its perfect for so many uses: top chicken or meat, burgers, dip your fries, cauliflower, or really any veggie you like. There are a couple of ways to make an aioli, the quick way and the right way. The quick way is to use ready mayo and add your desired flavors to it. But this, this is a real aioli, made from scratch. It literally takes two minutes to make and it will take your dishes to a whole other level.

Ingredients:

Cauliflower

  • 1 head Cauliflower

  • Olive oil

  • 1/2 teaspoon Turmeric

  • 1/2 teaspoon Salt

  • 1/2 teaspoon red pepper

  • 1/4 teaspoon cumin

Chipotle Aioli

  • 1 Egg yolk

  • 1/2 tablespoon Lemon juice (about a quarter of a lemon)

  • 2 cloves Garlic

  • 1/4 teaspoon sugar

  • 1/2 teaspoon salt

  • 2 tablespoon Chipotle in adobo

  • 1/2 Cup Vegetable oil

Directions:

Cauliflower

  1. Clean cauliflower and break into florets.

  2. In a small bowl, mix together all ingredients except cauliflower.

  3. Coat cauliflower with the marinade mix.

  4. Place in oven covered at 400•F for 40 minutes.

  5. Uncover, return to oven, and roast for another 10 - 15 minutes. Keep checking it and flipping it.

Chipotle Aioli

  1. Place yolk, lemon juice, garlic, sugar, salt, and chipotle in food processor. Pulse to combine.

  2. Turn processor on and slowly pour in oil. Process until aioli forms, about a minute. Turn processor off, scrap sides, process again until combined.

  3. Serve immediately or store in air tight container in refrigerator until ready to use. Makes approximately 1/2 cup.
