ARUGULA SALAD WITH WALNUTS AND PARMESAN

It's officially springtime! Yay! That means the weather is getting hotter and it's time for amazing gatherings and dinner parties! Here's a recipe to a fresh and simple salad. It's literally the quickest and easiest salad you can make. And one of the tastiest! I never measure the ingredients when I make mine. I just throw in all the ingredients and toss it all up….and within minutes (or really, about a minute), this fresh and oh-so-flavorful salad is ready to go. It's definitely a favorite of mine!

 

 Ingredients:

  • 6 handfuls fresh baby arugula

  • 2 Tablespoons freshly-grated Parmesan, plus extra shavings as garnish

  • 5 tablespoons good-quality olive oil

  • 4 tablespoons freshly-squeezed lemon juice

  • 1 handful walnuts

  • 1 shallot, thinly sliced

 
Directions:
  1. Add arugula and shallots to a large mixing bowl.  

  2. Drizzle evenly with olive oil and lemon juice, and sprinkle with walnuts.  Toss until combined.

  3. Serve immediately, garnished with Parmesan.

*NOTE: Remember I do not measure my ingredients for this salad, these measurements are approximately what I use, but please adjust according to your taste.
