CREAMY CUMIN & BELL PEPPER PASTA

PASTA, OH PASTA!!! I never really thought I'd be creating recipes of my own. Pasta is one of my favorites. I could never give it up. To me, it's comfort food. I was having a Girls' Night one evening at my house, and of course, that means cooking! I really wanted something different and yummy. I got some ingredients out of the refrigerator and started making things up as I went along. One ingredient after another went into the pot. In the end, this is what I came up with. I love all the contrast going on in this pasta dish. The textures, colors, and intense flavors come together in an appetizing dish everyone will enjoy! This dish is rich in flavor! This dish was such a hit at the get together that I always have my friends asking for me to make it again!

Ingredients:

  • 1 lbs pasta of your choice

  • ¾ stick butter

  • 1 white onion, finely chopped

  • ½ jalanpeno, diced

  • 2 cloves garlic, finely minced or squeezed

  • 2 tblspns flour

  • ½ green bell pepper, diced

  • 1 red bell pepper, diced

  • 1 teaspoon cumin

  • 1/2 teaspoon paprika

  • 1/2 teaspoon red pepper

  • 1/2 teaspoon black pepper

  • 1 teaspoon salt

  • 1 cup chicken broth

  • ½ cup heavy whipping cream

  • ½ bunch parsley, finely chopped

Directions:

  1. In a pot, sauté onion and jalapeño in butter till onions are translucent.

  2. Add garlic and stir for 1 minute.

  3. Add flour and stir well. You will have a paste. Make sure it doesn't stick to your pan.

  4. Add bell peppers and stir, covering the bell peppers with the paste very well, about 2 minutes.

  5. Add spices and stir well for 1 minute.

  6. Add chicken broth and mix well with a whisk so it thickens with the paste. Bring to a boil for about 10 minutes to infuse all the flavors.

  7. In the meantime, boil pasta in salt water till al dente. Drain and rinse.

  8. After the 10 minutes, add heavy whipping cream to the boiling sauce. Mix well. Bring to a boil.

  9. As soon as the sauce starts bubbling, add parsley and pasta, toss well, remove from heat. Serve immediately!
