Pasta is one of the most convenient dishes to make. It's fast and simple. Thats why it's perfect for weeknight meals. This particular one is not only fast and simple, it's also vegan, as long as you choose the correct pasta! This vegan pasta sauce comes together in a matter of minutes and needs less than 10 ingredients. It’s always great to have a homemade tomato sauce on hand because you can use it as a base for so many delicious dishes like pasta, chicken, meatballs, and even vegetable recipes. Say hello to one of my new favorite, super easy, super quick recipes! You will be very pleased with how this sauce will end up.
1 lb Pasta of choice
3 tablespoons Olive Oil
2 cloves Garlic, finely minced
1 handful Cherry Tomatoes, halved
2 (8oz.) cans of Tomato Sauce
1 teaspoon Salt
1 teaspoon Fresh Ground Black Pepper
1 teaspoon Fresh or Dry Basil
Boil water and cook pasta as directed on package. Drain and save 1/2 cup of pasta water.
In the meantime, heat pan and add olive oil.
Add garlic and stir well till slightly toasted but not browned or burnt.
Add cherry tomatoes and stir well for a minute.
Add tomato sauce, salt, and fresh ground black pepper. If using dry basil, add now.
Cover pot and let cook on low for 10 to 15 minutes.
Uncover, add pasta water till sauce is desired consistency.
Add fresh basil, if using.
Add drained pasta to sauce and mix well.
Put prepared pasta into serving plate, drizzle with olive oil and top with fresh cherry tomatoes and basil. Enjoy!
